Canning PotatoesMany people have asked me why I can potatoes. "Why not just store them in your root cellar?" Well, in hot and humid climates, like the one I live in, that isn't really an option. Potatoes go bad even in my concrete and fairly cool pantry in just a few weeks! So to maximize their usefulness, we can them! This makes them perfect for dumping into soups or roasts, frying for breakfast potatoes, or even turning into mashed potatoes. Give this process a try and I'm sure you'll love it as much as we do! The BEST Banana BreadLast week, my son loved bananas. So I made the mistake of buying more this week... in bulk. And they have just been sitting on the counter slowly going bad!
