🍒 Cherry Cheesecake with a Gingersnap Crust


Hey Reader!

My mom used to make a homemade cheesecake topped with cherry pie filling during the Christmas holiday, and it was always my favorite! With a family crowd of 20+ people, you had to act fast to get a piece!

Now, I just make one a little bit early to enjoy with my smaller family, and another one for the big group to devour!

Make this from scratch cherry cheesecake with gingersnap crust. It's perfectly textured, and the optional cherries on top make it a crowd favorite!

If you don't like cherries, you can skip the topping and devour the gingersnap crust and cheesecake by itself. It's great either way! This recipe calls for homemade einkorn gingersnaps, but you can use store-bought cookies if you are able!
