​Acorn Chocolate Chip Cookies​

Years ago I set out to determine how to make (and use) acorn flour. It's a traditional flour made for centuries, and since we have so many oak trees around here, I wanted to learn everything I could about the process!

So I let my kindergarten class at the time pick up all the acorns they could, and I took them home to process! The next week, we made acorn flour chocolate chip cookies together, and it was fabulous! Make this on your own or with the kids in your life for a fun fall project!

​Canning Potatoes​

Many people have asked me why I can potatoes. "Why not just store them in your root cellar?" Well, in hot and humid climates, like the one I live in, that isn't really an option. Potatoes go bad even in my concrete and fairly cool pantry in just a few weeks!

So to maximize their usefulness, we can them! This makes them perfect for dumping into soups or roasts, frying for breakfast potatoes, or even turning into mashed potatoes. Give this process a try and I'm sure you'll love it as much as we do!

​The BEST Banana Bread​

Last week, my son loved bananas. So I made the mistake of buying more this week... in bulk. And they have just been sitting on the counter slowly going bad! Which only means I get to make a ton of banana bread today!

I always like to make this recipe in bulk, slice and freeze the loaves, for easy breakfasts on busy mornings. You can make this with einkorn flour or any all-purpose wheat. Or if you prefer, I have a freshly milled flour banana bread recipe also!
