​Canning Sweet Potatoes​

Between now and the Thanksgiving holiday (at least in the USA), you should be able to snag sweet potatoes at a great discount! Grab them in bulk and can them for later. Or, if you're like us, and you grow your own sweet potatoes, but don't have a root cellar, then canning is a great alternative!

This recipe is canned in a very light syrup, though you can also process sweet potatoes in water. Just note that they will lose a lot of flavor if a bit of sweetness isn't added to the water!

Full Disclosure: Be careful about making this recipe, because your husband might decide it's the only way he is willing to eat chocolate chip cookies in the fall! In all seriousness, though, these cookies are a wonderful combination of fall flavors that everyone can enjoy!

​Acorn Chocolate Chip Cookies​

Years ago I set out to determine how to make (and use) acorn flour. It's a traditional flour made for centuries, and since we have so many oak trees around here, I wanted to learn everything I could about the process!

So I let my kindergarten class at the time pick up all the acorns they could, and I took them home to process! The next week, we made acorn flour chocolate chip cookies together, and it was fabulous! Make this on your own or with the kids in your life for a fun fall project!
